Lunch ala Mexicana!

Earlier this morning, our conversation on what to do for lunch …
Me: What do you feel like eating today?
Hubby: Errmm… I’ll eat anything you cook.
Me: Hmm… how bout spaghetti?  :)
Hubby: Nope. Not craving for spaghetti though…
Thinking inside my heart *hmph! And you said anything… and now you’ve got a preference?*
Me: So… how about TACO?
Hubby: OH YES!!! I Love your taco!! You make the best taco! (eyes brighten up!) I can eat that everyday of my life and will never get bored with it!!!!  image  (Big smile)
Me: Yeah rite?! You sure you won’t get bored? image
Ok ok … We’ll have taco then. I’ll go get the ingredients from the supermarket now.

My hubby is from the southern part of States, in which he grew up eating mostly Mexican influenced food. Since we are living in Singapore and only return home twice a year, I’ll cook taco once in a while to help him ease his cravings back in Houston.
Hehehehe … Honestly I get some ego boost when my hubby loves my taco version more than Taco Bell’s. Although I personally prefers Taco Bell’s Mexi Melts! :)
Thanks to Old El Paso taco seasoning, it taste just like traditional Mexican taco and it’s super easy to make! If you are interested to make some homemade tacos, this is the brand to go for! IMG_0913
All you need to add is some fresh lettuce, tomatoes, onions, coriander (Chinese parsley) and beef, of course!
IMG_0935 IMG_0917 IMG_0918 IMG_0919 IMG_0932 I usually diced the tomatoes into cubes. Then heat some olive oil and fry a few cloves of garlic till fragrant and add in the tomatoes. Seasoned with mixed herbs, light salt and generous amount of coarse black pepper! Make sure you don’t over cook the tomatoes or else it will be runny and wet.
IMG_0925 Next browned the onions with some olive oil, add in beef and stir fry for a few minutes until beef is almost done. Add in the Old El Paso seasoning mix and 1 cup of water. Leave it to shimmer for a few minutes and dish out.
You may pair it with crunchy taco shells or tortillas (my favourite!). I prefer the Old El Paso tortillas wraps better than the Australia version brand called Rositas. The Rositas tortillas tend to stick together and tear easily when you wrap them. A tip to separate tortillas is to microwave it for 40 seconds. When it’s warm, it’s easier to separate each piece. The way I like mine done! :) With lots of cheddar cheese!IMG_0946IMG_0951
The way hubby likes his!IMG_0955
He had 6 tacos and still not fully satisfied. I ran out of taco shells. Should stock up more next time!
Give it a try at home if you want to cook something different for your family. It’s a really easy and simple meal. I would say it is the Mexican version on our local “popiah”!
