Under the weather meal …

My hubby got a terrible food poisoning during his recent trip in Yangon, Myanmar. I can imagine the lack of hygiene and contaminated water that get into his system. He was basically sleeping in the toilet of the hotel room the night before flying back to Singapore! Diarrhea and vomiting took a toll on his body, making nausea and fatigue.
Now that he’s home, I’m taking care of him and making sure he takes his medicine on time. Playing nurse and mom with him at the same time! I remember how my mom will take care of me when I was sick and those tender moments still linger till today. I always remember that there will be soupy macaroni or hot porridge for me.
Being sick makes you lose appetite, but a good nutrition is a must to replenish all that was lost.
Following my mother’s footsteps I made him minced pork porridge and some side dishes to accompany in case his appetite gets better.

The pork porridge above may look blend but it taste real yummy eating on its own! I’ve marinated the minced pork with some sesame oil, soy sauce, chicken stock essence, pepper and a tiny bit of corn starch for 20 minutes before adding it into the boiling porridge. It added flavourful aroma when the porridge is boiling … :)
In addition to minced pork porridge, I’ve grilled some teriyaki cod fish, onions omelette and stir fry bean sprouts with fish balls.

These are some simple dishes for my patient hubby! Hope he’ll recover soon! I’ve already plan his daily menu for tomorrow too! Stay tune to see what I’ll whip out from my kitchen! Usually it’s some simple recipe ;)
